I’ve had a couple of requests to do a post of the entire Fresh Meats section. (Sorry vegetarians). It is nice to see the whole brisket making an appearance. Maybe I should get that charcoal smoker going again?

The meat packages without styrofoam trays that are marked Strip Loin (WHOLE), Sirloin Tip (WHOLE) are not mechanically tenderized. These are straight from the meat packer and labelled. They are the lump or cut of meat in just vacuum sealed thick plastic. They are also less expensive per kilo. If you are willing to cut your own steaks or roasts from these you can cook to rare or medium rare. Check with the butcher if unsure. Just ring the buzzer by their window. The butchers will also cut you steaks/roasts without mechanically tenderizing on request. If you want them 2″ thick they’ll cut them that way. Thank them, they’re great folks.

I had a thought. Would it be possible (down the road of course) to have a pic or caption indicating the lowest price for the particular item for the year as point of reference?
Why does Costco still mechanically tenderise? I find it disgusting and who wants to cook a steak to 165. I refuse to buy it the risk of pathogens in the meat is just too high
