Does anyone else absolutely love Caprese salad? Last time I was at Costco I was craving a good Caprese salad and decided to try the Vello Fresh Soft Mozzarella from Costco. I was a little apprehensive about buying this because I wasn’t sure how soft it would be or how good it would taste.

I paid $5.99 Canadian for the 450 gram fresh mozzarella. It was on sale for two dollars off the regular $7.99 price. That’s actually really reasonable for so much mozzarella!

Convenience

The mozzarella needs to be kept refrigerated and also it is recommended that you use it within three days of opening. One thing I found not very convenient is that once you open it there’s no way to reseal the packaging. I also wish it lasted longer than three days once opened, because it is quite a bit of mozzarella. The mozzarella could be used for pasta recipes, salads, casseroles, pizza or enjoyed on a charcuterie board. I used it to make a Caprese salad with basil, olive oil, fresh tomatoes and some salt and pepper.

One 30 gram cube of mozzarella is 100 calories, six grams of fat, 105 mg of sodium, seven grams of carbohydrates and five grams of protein. The ingredients list is short and sweet!  Also it’s produced in Canada!

Caprese Salad with Vello Fresh Soft Mozzarella

Taste

I would definitely buy this mozzarella again, it was soft but not so soft that I couldn’t cut it easily. It’s creamy, smooth, flavorful and tasted very fresh! For people who don’t like strong tasting cheese this is a really safe bet. It’s got a very mild flavor that pairs well with so many other foods.

This mozzarella makes an absolutely delicious Caprese salad! If you’re a mozzarella fan I would definitely recommend this mozzarella from Costco.

  1. I just wanted to say that you can freeze this cheese and it is still fine to use once thawed. The texture may change a little bit but if that bothers you then you can use it on a pizza and it is delicious 🙂
